Cauliflower is a cruciferous vegetable that’s high in fiber, antioxidants, choline and vitamin C, and is versatile and easy to prepare. Served mashed, it makes for a satisfying and nutrient-packed side dish. The addition of nutritional yeast adds stress-busting B vitamins and gives it a “cheesy” flavor profile. Try it once and you’ll be hooked.

Rinse and cut cauliflower into pieces. In a medium to large pot, add broth, garlic, salt and cauliflower pieces and steam lightly for about 20 minutes, or until softened. There should be enough broth in the pot to bring it to a simmer, but not so much that the cauliflower is submerged. Once the cauliflower is steamed, place all ingredients including nutritional yeast, milk of choice and ghee into a high-speed blender or food processor and blend until a smooth consistency is reached. Add additional milk, salt and pepper to desired taste and consistency. Serve immediately. Leftovers can be stored and reheated for up to several days.
